Hi,

Swedish Pancakes

You take from the hip and you'll see...........


2dl of flour that's what 0,05 Gallon?
pour that in a bowl and pour 4dl or about 0,1 Gallon of milk and mix well
Meanwhile put on the fryingpan and melt about 50gram or 0,11 pound? butter so it becomes golden and pour that into the mix and add medium sized 4 Eggs ( can use fewer eggs if you let mix sit in the refridgerator for few hours.......but that's not the royal way),and add a little sugar so the children like and then a little salt to balance that. A little bit of soda or beer can be added too.

Note on hip measurements
( for sugar one can use for desert pancake one spone to two spoons and for crepes no sugar - also brown sugar can give a slightly more mature taste)
( for salt one can use about one coffe spoon)

If the mix is fine it has a slight taste of caramell and a child would detect that so it's good to have a kid taste the the mix ;)

When frying the pancakes heat must be constant and not too high but around 4 on electrical stoves actually 4,5 which makes fiddling with the heat necessary and making pancakes on gas stoves or stoves with variable heat easier ;)

Between each pancake heat is controlled by watching the colour of the butter and more butter added each time and colour always held golden bordering on brown.

The purpose of the many eggs is to make the pancakes rollable which partly makes sense for crepes while filling also can be jam.

This recipee was handed down to me partly from the back of a milkcartoon and Prins Bertil of Sweden and my grandmother on my fatherside and polished from years of my own use.

I am not sure if that's the right measurement hence you take from the hip and you'll see- I do that anyway :mrgreen:

Right please correct if someone knows?

Ah ok, we would call that a 'Quart' of milk (Quarter of a gallon) ........



I will have to try this recipe for sure !!!

Is there an actual recipe for Swedish Meatballs too ???

ok heres my gift to the recipe pile ......


'Mad Viking Bar-B-Q'

The name would require a rather long explanation - but it comes from a group of guys I worked and lived with about 20 years ago - we all rented and shared a really nice house in the woods and as young men left to their own entertainment we went a bit wild ~ named our group the Mad Vikings and had many bonfires and consumed mass quatities etc etc... theres a sort of card/ drinking game that goes with this called 'r*pe and pillage' ~ we all had Viking god names etc.... even flew a huge flag from the roof --------- great fun til the owners showed up one day and they werent smiling 8) :mrgreen: ah the good ole days :lol:


actually the food isnt nearly as much fun as the story :lol: ...... but I made this many times for our BarBQs and card games ---- its kind of like the Buffalo Wings name comes from the City of Buffalo and has nothing to do with Bison.....

theres really just two tricks to it - the cooking and the sauce....

I Microwave the chicken until its about half cooked --- this cooks it from the inside out and keeps it real juicy since it only needs half as much time on the grill and doesnt dry out.....

the Sauce ( it tastes better when laddled out of a real Viking helmet with horns and all :mrgreen: )

any good Hickory Bar B Q sauce ( I use Sweet Baby Rays these days)

a mixture of half that sauce with a 1/4 of Apple Butter and a 1/4 of Peach or Apricot preserves --- sprinkle garlic liberally over the top and toss in about half a beer --- mix mix mix and then cook the half cooked chicken until its done and juicy ........

I still make this occaisionally and my kids love it since it has a good balance of sweetness.......

and I have found many variations on this theme since,,,,
current favorite is substituting Pineapple preserves for the Apricot and Chestnut butter for the Apple Butter .....




ok well that turned out to be a long one anyway 8) :mrgreen:

guys, i just LOVE that thread:-)

i'm working on a translation of the gulyash recipe, and another special, a bohemian (thats an area in the Czech republic, close to where i live) Chicken recipe.
i just got to figure out the correct english words for some of the ingredients :D

and sho nuff, i'll try both bjorn's and donner's recipes soon. Viking Barbecue, gotta love it!!!

my parents owned THREE italian restaraunts when i was growing up. dad made me work HARD to earn that $125 that i paid for my 1963 SG Junior back in '75 :mrgreen:

but here it is.....i still remember it, and make it for my girls from time to time:


the DEVITO Italian meatball recipe :shock:

2 lbs GOOD ground beef
1 lb ground pork (you always want 2/3 beef to 1/3 pork ratio)
4 eggs
Progresso Italian Bread Crumbs
Some fresh garlic, chopped finely
Some fresh herbs if possible, Basil and Oregano

start by mixing the pork and beef together BY HAND. it's messy. just do it.

break open the eggs, make sure to break the yolks, and blend them into the meat.

add 1/2 cup of the bread crumbs, and mix that in

begin to mix in the ground herbs and garlic

make sure this is MIXED WELL by hand until everything is properly spread out.

start to make meatballs by hand, by taking handfulls of the meat mixture and compressing it in your hand.

once finished, get a large cast iron skillet, fill it 1/3 of the way with extra pure virgin olive oil. heat it to a good medium temp.

place meatballs in HOT oil, cook them on one side until golden brown, then turn then, let them cook on other side, then turn them one more time to make sure they cook thoroughly. repeat, repeat, repeat.

now.........get a LARGE pot, and fill it with your favorite red tomato sauce. if you're REALLY wanting to be authentic, you would have made yOUR OWN. :mrgreen:

heat the pot full of sauce, and then set it to LOW and let it SIMMER. place ALL the meatballs inside the sauce, and let them simmer for hours.......at least 2-3 hours......and the sauce will begin to enter the meat.

serve with your favorite pasta, and EAT AND GET FAT, as my italian grandpa used to say!

Bobby you inspired me and I just finished making spagetti with a variation of your scratch meatball recipe......

I left out the eggs and used pork sausage and added some wild green onions
the kids picked yumm ----- yeah you have to mix the meat by hand - get all those body salts in thier :mrgreen:

I also put some butter on my hands and separate the noodles - improves the flavor and slipperyness of the noodles ....


Bowl noodles parmesan sauce/balls more parmesan fork = yum.
